I wondered this myself, and decided to compare the FIDE and FICS Blitz ratings of the top players on FICS. Since blitz on the internet differs from slow OTB chess, some players' FIDE ratings differed dramatically from their blitz ratings. However, the average ratings were remarkably close. Among the top 30 humans on FICS, the average FICS rating was 2343.8, and the average FIDE rating(using the July 1998 rating list) was 2349.333... On other servers, such as chess.net and ICC, I can't provide exact data due to not knowing all the players' names, but I would guess that the top players there have rather inflated blitz ratings. For example, at ICC, there are several 3000+ rated blitz players, but the world's top FIDE rating is in the low 2800's. You can find a list of the top human players' handles and ratings at FICS by logging in to FICS(freechess.org 5000) and using the "hbest" and "hrank" commands. FIDE ratings(and even FIDE titles in some cases) are withheld to protect the players' anonymity.
