Why not use a time of 60 min.+60 sec.per move which will then give each side a
full 2 hours, providing they make 60 moves in their game. This would then equal
the original time control of 30 moves in 60 min., or 60 moves 120 min.

Besides, i think that the 2 min.+ 120 sec.per move won't be a problem as you
think because for one, the Granmaster can move very fast in the early opening
stages as he knows his lines very well and thus he will then have added on to
his clock 2 additional minutes for each move.
