Personally I much prefer time controls with increments, and I never use
anything else whan testing my own engine. Giving a small increment for
every move made seems much more logical than suddenly giving a huge increment
after 40 (or whatever) moves. What is so special about the number 40?

I believe that time controls of the form x moves/y minutes are common only
for historical reasons. Before the days of digital chess clocks, time
controls with increment were probably impossible from a practical point
of view.
