I've never tried to modify pro deo myself, but I'm pretty sure you make a custom
".eng" file. (There are others here who know more about what the available
parameters are [or where to find documentation]).

To configure fruit under Arena,

(1) make sure fruit is one of the engines currently active
(2) go to Engines --> Engine x / Fruit --> Configure
(3) change parameters (e.g., set Pawn Structure = 110)
(4) click "Save as new engine" and use some descriptive name, e.g., "Fruit 2.0
[ps=110]"

Now when you pick this engine, Arena will use your new configuration.

By the way, this procedure works for any UCI engine under arena (e.g., Spike,
Glaurung, etc.)
