I am not sure I understand this.  What does it mean that you can
"arrange the windows however you like" when there is only one
window?  Is it some kind of "windows inside a window" GUI?  I
have only worked with such a GUI once (the Linux version of the
computer algebra system Maple), and I abolutely hated it.

I think this will be my choice.  I just have to find a good solution
to the problem of several running games.

I agree, especially when it is not even possible to resize the
components of the window.  Sigma Chess is awful in this
respect.  The window size and the size and layout of the
components are completly fixed.  You can choose between
three different board sizes, that's all.
