Subject: Can any program randomly go out of book?

Is there any commercial programs out there that you can set a range of opening
depth where they will leave book and make some other semi-solid type of move?

When I am playing in a tournament (at my level), my opponent's can leave book
anywhere from move 3 to move 12. Unless I am in an Open section, it is rare that
my opponent knows the opening much beyond move 12 or so.

It would be nice to be able to play a program which is not an opening and
endgame superGM while at the same time, I have set it's playing ability in the
middlegame to sub 1800.

Does any of the commercial programs out there have this type of functionality?
