Subject: Best software for best opening moves with book off?

I’d be grateful for opinions on which of the top Chess software generally plays
the best opening game with its book turned OFF.  I think that question is
equivalent to “ which is the best software on which to practice/train for quick
chess with a sharp human opponent that quickly plays outside of book by inputing
the opponent’s typical non-book moves and observing the software’s response?” An
Opinions on the best software for this?  Thanks in advance.
