They use hash tables and opening books.
I also know that Shredder used tablebases.

I do not think that fritz lost points from not using tablebases.
It lost the games against sofer and har zvi because of a mistake in the middle
game and tablebases probably could not help.
I do not think tablebases could help in the games that it drew(In most of them
Fritz had not better position so tablebases probably could not help)
All the program used opening books.

I am against the decision not to allow upgrades and I am not going to operate
next year if this decision will not be changed.

I agree that not all the operators have knowledge about computer programs.

I know that the operator of shredder(he voted against computer in the league)
said that allowing upgrades in the software is the same as allowing a different
player to play (he was afraid that programs will be 200 elo better from allowing
upgrades)and was surprised when I told him that most of the improvement in the
last years are because of hardware and not because of software.
