Use Ctrl-F to flip the board, and then hit the space bar and it'll make a move
as White.  All that stuff should be in the pulldown menus too.

Btw, you're giving Chessmaster credit, but you don't understand the Fritz
interface yet?  You need to give it time, and it'll start to all make sense
after a while.
