You are right

I still believe that it changes the margin of error but I guess based on your
results that the change is very small and that the standard deviation is maybe
only 10% smaller.

There are cases when one side get a winning position or a draw position out of
book.
if you play the same position in both sides these games will be 1-1

If you do not play the same positions both sides it is possible that the weaker
player will be lucky and get more wins from the opening or more draws with
black.
