Ole K. Christensen has just released Sigma Chess 5.0 for Mac.
Both the Lite (freeware) and Pro versions are at www.sigmachess.com.

Sigma Chess Lite 4.02 was one of the nicest freeware Macintosh chess programs.
Sigma Chess Lite 5.0 adds many features I've been asking for.

No Mac? - tell a friend!
To give an informed recommendation, check out the online illustrated manual:

Some new features in 5.0:

- PowerPC engine (3-4x faster than Sigma Chess 4.02 Lite).
- "Monitor" and "Next Best Move" added
- Supports ExaChess engine interface - you can now play matches against
     Screamer, Crafty14.11, MacChess 4.0, GNUChessMac 4.0
- Better PGN/EPD support (more robust, faster)
- Improved database support (more compact, more functionality)
- More piece sets
- More levels and time controls
- Multiple chess engines
- Multiple game windows
