Modifying the Gandalf.res file (this one includes the bookpath and more) and leaving the book field empty (I cleared it) doesn't work. I let Shrdder and Gandalf play 2 games. Then I loaded the 2 games via winboard and Gandalf to see the book moves from Gandalf. Gandalf played moves which are not in his book!!
