Deep Fritz can, but you can't adjust the number of threads used by the native
version of Crafty (available at the Chessbase download section). Don't know
about Deep Junior.

As mentioned, very few programs support multithreading. Adjusting, if possible,
is made by clicking on engine parameters under engine selection. There are
usually other interesting options available besides the number of threads.
