The ExaChess compatible engines can be found by going to
http://members.aol.com/Macchess/
then going to the download page. I think that the ExaChess compatible
GNUChess and Crafty have download links listed right below the ExaChess
entry.
The ExaChess compatible version of MacChess is MacChess 3.0e (requires
PowerMac). Given the engines, put aliases of the engines in the "ExaChes
Tools" folder. They should now show up under the "Play" menu in
ExaChess.

The directions for using them are in Chapter 6 of the ExaChess online
manual.
