The correct way :)

Game -> Level  , select one of the folders where you want this
new time control, e.g  Personal Levels
Click 'New Level..'
A new level is created, rename it to your liking.
Click  'Edit'
In the wizard select Tournament level, then in the first time check
fill in the 40 moves and the 2:00:00
In the second time check, fill in 0 for number of moves, this indicates
sudden death.
