There is no answer to this question because it depends on ...
Everything.  Including:

1.  Size of memory on the particular machine
2.  The particular problem being analyzed
3.  The program being used to analyze

among others.

A general rule of thumb is:
Leave enough memory for the operating system and a little headroom, then give
everything else to the chess program.  On this machine (for instance) I have 512
megs of ram.  I generally allocate about 380 megs for hash tables when analyzing
chess positions.  If I was doing strictly endgames, I might reduce that and give
more memory to the EGTB cache.

Dieter did an interesting study a while back.  It might be a good idea to look
that study over (especially since I don't remember the conclusion!)
