Since the original question asked for Mac chess programs, not a comparison of
the relataive values of CPU's, I'll answer the question:

1st -- Screamer Chess (my program)

2nd -- Crafty (an OS 9 build)
available at Bob's ftp site:
ftp://ftp.cis.uab.edu/pub/hyatt/macintosh

3rd -- SigmaChess light/full version
       Vanessa Chess
       CM 6000
       MacChess 5.0.1
      etc.

The next release of Screamer is due soon.
Also look into Exachess, an excellent Mac chess database
