This confirms pete's statement. The best GUIs for WinBoard engines outside
WinBoard itself are Chessmaster and Chesspartner. The Chesspartner GUI isn't
very appealling IIRC, but that is beside the point.

Shredder and CB suffers from the same problem, which is lack of proper WinBoard
support. The number of UCI engines is irrelevant in the context of WinBoard
engines.

Remind him of the WinBoard protocol in your next mail. A better adapter is
preferable compared to engine options IMO.
