Simply because whites rook becomes a valuable piece in the end, and makes it a lot easier to mate. Compare: 1.f5 Qh6 2.Bxg7+ Qxg7 3.f6 Qf8 4.f7+ Ne5 5.fxe8Q Qxe8 6.Qf2 Qe7 1-0 with 1.Rxe8+ Bxe8 2.f5 Qh6 3.f6 Qe3+ 4.Kf1 Ne5 5.Bxe5 dxe5 6.f7 Bxf7 7.Bxf7 g6 8.Qf2 Qd3+ 9.Kg2 Qe4+ 10.Kh3 Kg7 11.Bd5 Qf5+ 12.Qxf5 gxf5 1-0 Basically, do you want to be up a rook or a bishop? :) Slate
