ExChess is a good, strong program written in C++ that is open source.

Gerbil is an interesting open source beginning program written in C++.  It has
extensive use of callback functions.

Arasan is another good program written in C++.  It is Windows specific.
Chessterfield is an interesting C++ chess program.
NewRival isn't particularly strong and is tied to a single compiler (Borland)
but it is full-featured and interesting.
PolarEngine is C++.
Rémi Coulom's "The Crazy Bishop" is C++, but some of the engine is not publicly
available.  However, the ChessLib interface he wrote is excellent and he also
provides a sample engine.

Lots more, I imagine.  You will find ten times as many in C.
