  Probably SigmaChess. Hiarcs is the strongest program but offers few features;
it is geared towards serious training. ChessMaster 6000 for Mac is actually CM
4000, a strong program with a lot of features, old but still at master strength.
There is also the freeware MacChess. SigmaChess also has a freeware which offers
a lot. All of these programs are master level programs, Hiarcs is the strongest
by far.
