I vote for Chessmaster 8000. It has many, many human-like personalities to play against, ranging from the rank beginner on up. And because the different personalities have difference quirks in their play -- not just lower ratings but actually different styles and weaknesses -- the variety of play is greater. Plus the tutorials are instructive and even fun.
