Nimzo is a Winboard engine and not a UCI or MCS engine. I set it up as such in
CA and have had no problems. I never tried to use Winboard engines in
Fritz/Chessbase, so I cannot comment on how well this would work. As to SOS, I
set it as a UCI engine in CA. I presume you are using Roland's UCI to WB
adapter. Are you using the latest version, 2.0? If not, you can download it at
Frank Quisinsky's site (among others I'm sure): http://www.amateurschach.de  in
the Download section.
