I'd opt for the following:
(a) Have one email address non-public, to be used by CCC.
    I.e. change the current email address to be non-public.
(b) As part of the "profile" let a user optionally enter a public email address.
    That one may be shown with every post of the user, but may also be
    thrown away whenever seen fit, and be replaced by nothing or by
    a new public email address as part of the profile editing.

That way everybody can control what's in the public about them, without
interfering with the ability of the moderators to reach the forum members.
