I found that as you turn the ELO slider down, the playing strength of the
engines gets a little unpredictable. What I mean by this is the play at say, for
example, 1800, is very inconsistent compared to how a dedicated computer would
play at this strength. For example, if I turn the ELO slider to 1700, the
engines would lose all the time to my Constellation Quattro, which is only about
1580 ELO on the SSDF list.

I would agree that you have to play a fair few rated games, adjusting the ELO
slider upwards every time you win a game. After about 20 games, you will have
some idea of what rating makes a "comfortable" opponent for you to play against.
In my experience, however, the ELO rating the Fritz interface gives you is about
200 - 250 higher than reality. I know Fritz rates me at around 1900, but my real
playing strength is only about 1700.
