One of the reasons is that just in case your opponent does not make the expected move, then you have another cut-off move to try. The PV stores first you first line of moves and counter moves, then it takes your second best move and its counters. As the depth of moves grows greater, you are at an advantage if you store potential cut-off moves for each variation. Thus the PV grows into a triangle as the depth increases.
