In accordance with UK law, as I know it (and that's not too well), you are allowed to copy the book into a format that suits you. You would not be able to sell this format. However, if you use the subsiquent data to create an (improved) book then that would be OK. What wouldn't be OK would be for you to take the commercial book, create a new book and redistribute it.
