Fritz7 & Shredder6 comes with the same GUI.
Shredder6 also comes with it's own GUI. Also known as Classic GUI.
AFAIK none of the GUI or packages comes with any tutorials (I have both of them)
Both program has the same features in terms of GUI, since they are the same GUI.

The recent GUI is mainly differant from the previous GUIs (ie, fritz6) in the
sence that they provide online server to play chess with humans and other
computer programs, (ie, FICS).

Both programs comes with fairly big database and obviously with their own
opening book. With the GUI you can use UCI compatible engines (ie, sjeng).
And the other features are more or less the same as previous GUI (ie, fritz6).

cheers,
