Why does 1.Nf3 deserve a double exclamation mark?

It does seem a little better than taking Black's knight, both of which give
White the advantage, but unless I'm missing something it does not lead to a
quick checkmate or overwhelming advantage.

1.Nf3

1...Nf2+ 2.Kg1 Nh3+

   [2...Ng4?? 3.Qxh7+! Kxh7 4.Ng5+ Kh6 5.Nxf7+ Kh7 6.Rh3+ Nh6 7.Rxh6#]

3.gxh3 g5

   [3...Qb6? 4.Kf2! Qb4 5.Ng5 Qf4+ 6.Ke2 +-]

4.Nxg5 Bf5 5.Kh1 Qf8 ±
