e1e8 is an illegal move but it is not checkmate.

The target in check is not to capture the opponent king
but to threat the king when the opponent has no legal move.

a better example of mate checkmate if it is possible may be

1.b1e5 d7d6 2.f1f7# or 1.h1h8 g8f6 2.a1f8# or if you want to
use only one illegal move
e4 e5 Bc4 Nc6 Qxf7#
