The GUI I do for this is Chessmaster.
On ver. 8000 I set on spoken move and and blindfold play. Then I set the
scoresheet so small that it only show the clock and puch the board to the left
so it's not visible. To repeat a move if you didn't hear it you can use <ctrl> M
to repeat it.
On ver. 9000 yoy can not push the board enough to the left so I have to cover it
with some window (shortcut and game status). The repeat of move is <ctrl> V
here, but you don't miss moves other than if you don't is in the room.
If you prefere to add move in othere than SAN set this in preference menu.

For Winboard engine to play directly, I don't know any. I have added this
feature to my engine but it's still some month before I'm ready to release it.
You can set it in a mode where it annonce (spoke) moves and show clock's after
each move and on command. Also repeat move (with spoken annonce) is implemented.
