There's no commercial chess program for OSX available. CM6000 and Hiarcs7 are
available for OS9 and below and maybe run in the Classic environment of OSX.

SigmaChess6 is freeware. (http://www.sigmachess.com/)
Vektor3 is shareware and a very nice GUI, but the engine itself is not that
strong. (http://www.schubert-it.com/vektor3/)

And then all/most of the free engines, which come with source-code should work
fine under OSX. Crafty is probably the strongest among them. And they don't come
with a GUI of their own. So you'd need xboard (and X11) to have a GUI.
