Hello,

there are some chess engines where you can already control a lot of playing
style options via the interface, for example the beginners personalities in
fritz, AFAIK chessmaster has a lot of ways to customize "personalities" as well.

If you want to change even more than that, this is an interesting but also quite
difficult task. You will need to change an interface as well as a chess program,
so you should already have quite some programming experience.

I did something like that to the Zzzzzz chess program a long time ago, and also
changed some things so that it can play without kings (beginners chess games).
