For engines which are not written in assembler, it would be a more or less trivial task to port them to other OSes/platforms. This is not true for the GUI though. While using xboard-compatible GUIS (xboard itself is just one of them - eboard or knights are others) would be ok for people like me, it wouldn't be acceptable for the average user. When you support a platform, there are some minimal costs you have, independant on how many engines you will sell on that platform. For example, at least one person in the support department should have heard of said platform. [which is a bigger requirement than you might think now ;)] The market on non-Windows platforms is small already. Selling an engine w/o a GUI would cut down sales even more.
