Yes, all of your tablebase files should be in ONE folder named Tablebases.
You did not mention which tablebases you have. The Nalimov 4 disc set or
tablebases from downloads.
If you have the 4 disc set, just install each disc with it's installation set
up. It will create folder named Tablebases.
If you have Fritz 7 you can set the path in with Tools>Options>Tablebase Tab an
then type in the path. Fritz 7  will probably have the default path already set
in this dialogue box.
If you happen to have Fritz 6 and you only have the tablebases from the Fritz 6
CD, you can set the path in the Chssbase ini file. This you would probably find
in the Windows folder. Yes it is Chssbase not Chessbase. Click onto that
Chssbase ini file and you can type the path in there for the tablebase option.
Note, the folder which you place the Tablebases in does not have to be named
Tablebases. You may name it anything you so desire, so long as Fritz knows to go
there to look for the Tablebase files. Simply typing in the correct path is
enough. I believe it is best to keep it simple and have a Tablebase folder named
as such. Why complicate matters?
If you have the Nalimov 4 disc endgame Turbo as I mentioned above, you won't
even have to worry about that. Just simply use the installation set up and Fritz
will most probably set the same pathway as it's default.
As on my computer it is     c:\program files\chessbase\tablebases
