1. For big engine tournaments where all engines use that book, I recommend using
"normal" book option settings (F4), *not* "optimal" which IMO unnecessarily
limits the variety too much.

2. Sometimes a *7th* ply may be played by that book. That's because of
transposition/reversed color issues. Check "Unplayed transpostions" in the book
properties when you browse the tree manually, too see more in such cases.
(Right-click into the book window for the book display properties.)
