I guess these are from different download sources (i.e. I don't see Quark or
Fortress on ChessBase download pages).

Downloading and unzipping into the engines folder, eng & dll files, will be
sufficient *only* for engines which are so called cb-native, IOW the Fritz
engine protocol format. *UCI* engines usually have their own folder and are
installed from within Fritz (see Engines menue). For WinBoard engines, you need
either the old Winboard adpater (discontinued; use the Nov. 2000 version) or the
Wb2Uci adapter provided by O.G.Malin.
