I do not know where did you read it. Chessbase claimed that Deep Fritz is better also with one processor. The reason for having non deep version is simply the fact that they were ealier engines. The only case when they were not earlier engines is the case of Junior and Deep Junior is probably slightly weaker than Junior6 or Junior7 on one processor. Uri
