You could also toss out PocketPC and go for the market leader: PalmOS!

The Palm Tungsten-T and the Sony NX70 offer ARM processors now, and terrific
high resolution screens.

On PalmOS you will find yourself in good company, with ChessGenius
(http://www.chessgenius.com) and Chess Tiger (http://www.chestiger.com) for
example...
