The book that is delivered with Deep Fritz 7 is one of the strongest opening
books availlable that has been worked on for several years. If you start from
scratch it is unlikely that you will ever reach similar quality.

If I were you I'd start with the book that came with your Fritz and then change
it manually based on the results and the games played. If you discover lines
where it plays badly disable them, if you find lines where it does very well,
raise the probability for them being played. You can also add lines in case you
know improvements.

I don't think there is any technique that is superior to manual editing. You
could start with the games you downloaded to look for good and bad openings for
Fritz.

As a commercial book has to be wide enough to not be boring, you should probably
be able to find some improvements if you care for rating very much.
