I learned about real mode vs. protected mode long ago when I learned to do graphics in mode 13h, in DOS. Even from my limited experience in DOS, I agree with you. DOS is a lot easier and simpler if you're doing low level stuff. I hated Windows programming at first, but with things like SDL (www.libsdl.org), it makes it easier with direct buffer access, etc.
