But the patterns will be pretty much the same, I don't think playing one strange
move is enough to upset the whole opening theory. Maybe if you are trying to get
an engine out of book, but humans aren't that dumb in general.

Even if it worked, don't you find it annoying to force yourself to play what you
know to be inferior moves, just so that the opponent can't toss out 20 memorized
moves?
In fact by doing this, haven't you just granted the opponent the superior
position he was aming for?

Yes but it would probably be stronger if it knew a lot of theory.
