Chessbase 8 and UCI are incompatible.

Wrong, only the Fritz GUI accommodate UCI engines.

Shredder 7.04 UCI is an update for Shredder Classic 7.
You dont need it for Fritz GUI since there is also a native Shredder 7.04 engine
available.

Yes, it is available as Winboard engine and also as Chessbase-native engine.

Is Crafty also a UCI engine?

No
