I thought I did read someplace that you can record games in the new Fritz
without having the analysis engine following, but I don't have this program so I
could be mistaken.

When needed?
When you do some other works on the PC, this could be some background
processing, transfering a game to hotel-tv or web from a realgame, adding
live-comment etc. If an analysisengine have to run it will make the pc slow for
other works. Maybe also if you only record games and have 200 games to do this
weekend you want the chessprogram to react as fast as possible. Alternative are
a DB prog. ala CB or CA but for this single task it is a little overkill.

By the way, CP call it player vs. player and WB call it edit game.
