Yes,indeed pieces can be removed.But in my opinion the game
is never the same.
I have a Saitek Kasparov 2100 plasic dedicated that I play
"Up stairs" when my wife starts to complain she does not see me.
The damn thing is so tactical I must remove at least a castle.
But for me the match is never the same as having all the pieces
on the board.Removing pieces is NOT the answer.
The answer to dedicated low level ( 1300-1700 )chess enthousiasts
is to have an engine adapted to these levels.
NOT one that kills at any cost.
