I guess you can. I did it for version 6.
You have to edit the engine with a hex editor and replace the internal name with
a new string: say "Fritz 8" in "Fritz 8a" and rename the eng file in a similar
fashion.

I did it for Fritz 6, but I don't have Fritz 8 so I can't do it for you.
