They do not play 200 games but it does not mean that they cannot do it.
The main reason that they do not do it is lack of money in chess.

I expect to see GM's do it if the average GM can expect to earn 66,666$ in a
year by playing 200 games at 120/40 when the money is proportional to the number
of games but it is not the case.
