As far as pondering in Winboard, to turn it off go into Winboard before you run
any games and go to the menu 'Options' ---> General and uncheck "Ponder next
Move"

As far as creating a new book for Ruffian I know that you can do it, but I have
no idea what options you would need.  Try opening up Ruffian in console mode and
typing "Help".  I think it will give instructions on how to create books.
