They turn off king safety in endgame and nowadays it seems the habit to have very agressive king safety. Objectively this is not sound, but it wins from humans, so i guess that's the reason why. Another very important 2 factors why they do not want it, is because nowadays they score pieces as like +4.5 pawns and pawns as 1.0. In case of hydra a pawn is just 0.64. Further when winning the exchange white has a passer at d4. In past all passers got a big bonus. Nowadays software is smarter. You can see it best at fritz it correctly doesn't give the passer a big bonus. If you add up the reasons to not play Rxe6 by simple positional rules the picture is clear. So they really prefer to not give away the exchange nowadays in this type of position. GM's are still way better than software.
