For running chess program vs chess program matches, hyperthreading is not
as good as a dual processor machine. Hyperthreading only improves the
front-stages of the cpu's workload. A dual processor machine would improve
all the stages. Many programs gain little from hyperthreading, but some gain
quite a bit.
If this is the main thing you want, go with a dual processor machine. A
dual processor machine with hyperthreading would be better than a dual
processor machine without hyperthreading(by some amount). A dual processor
machine without hyperthreading would be better than a single processor
machine with hyperthreading.
